Even though this article is written for moms, I think it’s applicable to just about everyone. I especially like the tip for cooking double and freezing the second meal for later. I mean the stove is already on, right?
Also, it got me thinking about this eating out thing differently. Maybe instead of giving my family a “x times” per week goal, the hubs and I should decide on a specific amount we’re comfortable spending each month and go from there. We could even take it a step further and operate dinner out on the envelope system. We could keep the amount of cash we agree to spend in an envelope, and when it’s gone, it’s gone. Ooh! And if we had extra at the end of the month, it could go into a special envelope for a super nice dinner out.
I’m going to have to think of this one some more. The more I think about it, the more I’m beginning to wonder if the envelope system would take away from the mindset that eating out should be a treat. And what happens after we spend all but the last $10? Would we then going to McD’s so we could stay under budget? Not in line with the whole clean up your eating goal. Hmmm what do you think?

So this week has been interesting. We’ve been rather busy, and I’ve been a poor planner.
On Monday, my nephew played in the state championship little league tournament. I wasn’t prepared for the six o’clock start time and neither was dinner. I ended up throwing a salad together to take with me, but the hubs bought dinner at the concession stand. Yes it was only $5, yes it supports local little league, but it still was money spent.
Tuesday, my 2:15 doctor’s appointment turned into a 4:30, which put B and I sitting in cross town traffic at rush hour :(. Had I been thinking ahead, I would have thrown one of those many delicious recipes from my “crockpot” Pinterest board in that morning, but I wasn’t, so I didn’t. The hubs drove through Chick-fil-a and grabbed some grilled chicken nuggets to throw on top of the rest of the salad stuff I had at home. Again, more money spent.
I did manage to redeem myself last night though. I baked some chicken and topped it with a spinach bruschetta. Yum! While that was baking, I went ahead and made burger patties for tonight. The babe has a doctor’s appointment and there are shots involved (poor buddy) which might translate into a very unhappy little guy this evening, so I wanted to be prepared.

Who knew that I was being trendy when I decided to spend more time around my own dinner table? According to this article from USA Today, the younger generation is eating out less. They blame the economy, but I have to wonder, is our generation returning to a simpler time? Are our values shifting? We’re more aware of what we are eating and have started a movement against the GMO and processed crap out there in the world. We’re making baby food and vowing to change the way we eat. What do you think?
Well last week was a major success! We ate at home every night but Saturday. I’ve grocery shopped for the week, although I admit that I don’t think I planned quite like I did last week. Hopefully this week will be equally as successful. I promised a few friends I’d share my recipes from the week. Links are included!
